Herati kechari is made with rice, mung beans, onions, and a little masala. Kechari is like steamed rice and is cooked together with mutton. To prepare it, first we fry the onion in oil until it turns brown or even slightly black, which changes the colour of the rice and makes it beautiful. Then we mix the rice and mung beans with onions and masala and let it simmer. The meat is also placed on the steamed rice to cook with the rice. This dish is very delicious and its smell makes the head hungry.
